New Recipe: Gnocchi in Roasted Red Pepper Sauce

Happy Tasty Tuesday!
Fall is for hearty dinners by the fireplace and this specific recipe will leave your stomach happy and full. Gnocchi is a pasta-like dumpling made from potatoes and there are plenty of sauces that work fabulously with it. This specific roasted red pepper sauce has a bit of a bite to it, making a delicious combination with the gnocchi. Another reason you'll love this recipe, it only takes about 15 minutes to prepare, giving you plenty of time to relax after a hard days work.
Ingredients:
  • 1 package of refrigerated potato gnocchi (around 16oz)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 (6 ounce) jars of roasted red peppers, drained
  • 2/3 cup heavy cream
  • 1 tsp basil
  • Salt and pepper to taste
  • Parmesan cheese and roasted red pepper flakes for garnish

Directions:
  • Boil a large pot of salted water on the stove and add gnocchi according to package directions. **Most gnocchi rise to the top of the pot when cooked completely, be careful not to overcook**
  • In a saucepan, heat olive oil over medium heat. Add garlic and cook until golden brown.
  • Add roasted red peppers, and a pinch of salt and pepper, and cook for 5 minutes.
  • Transfer roasted red pepper mixture to a food processor or blender and puree until liquefied.
  • Return sauce to pan, add cream until warm throughout.
  • In a large bowl, toss gnocchi and sauce together, add to serving bowls and garnish with parmesan cheese and roasted red pepper flakes.
  • Enjoy!
