New Recipe: Smothered Burritos

I'm sure I'm not the only one vowing to eat better in 2015, but I'm also a firm believer that we all need a cheat day or we are doomed to fail. This burrito recipe is super easy to make, prep-time is about 30 minutes (including the time it takes for the ground beef to cook up) and it had so much flavor when it was served. They're definitely big enough that you don't need to serve anything with it, and feel free to substitute any veggies or toppings you would rather have, this is definitely a customizable recipe.

Ingredients:
  • 1 lb lean ground beef
  • 1 can of enchilada sauce
  • 2 small cans of green chilies
  • 1 can of refried beans
  • 1 package of wheat wraps
  • 1 small white onion, diced
  • 1 small can of black olives
  • 1/2 cup chopped jalapeƱos
  • 1/2 package of shredded Mexican blend cheese
Directions:
  • Preheat oven to 350 degrees.
  • In a large pan cook ground beef and onions until ground beef is browned. Drain and remove the excess liquid from cooked ground beef.
  • Add 1/2 can of enchilada sauce, green chilies, black olives, jalapeƱos and about 1/2 cup of shredded cheese to ground beef mixture. Stir till combined.
  • Open package of wheat wraps and spread refried beans over them (as if you're applying peanut butter to bread), add as much beans as you prefer.
  • Once all the wheat wraps have bean spread on them, scoop meat mixture into wraps to your preference and roll them up. I personally filled them as much as a could before wrapping them so they were thicker.
  •  Place rolled burritos into a pan (I used these disposable aluminum tins). Top with remaining enchilada sauce and top with shredded cheese.
  • Bake in the oven for about 20 minutes, until cheese is melted and bubbling.
  • Enjoy!

  1. Ah that looks sooo good! I also believe everyone should have a cheat day. Even if you are able to stick to eating healthier/ your diet without cheat days, eventually at some point you're going to crack and then end up binge eating junk and then want unhealthy food all the time. When making dishes like these and baked pastas, I usually use disposable aluminum tins too. It just makes it so much easier.

  2. That looks delicious! Like you I'm trying to eat healthier this year, and I find if I don't give myself a cheat day I end up binge eating chocolate and cancelling out all of my hard work!

  4. These look so amazing. Seriously. I'm avoiding processed carbs (breads, chips, etc) so I may have to forgo the burrito aspect of them but I don't doubt this wouldn't be delicious as like a taco/burrito bake. Mmmm!
