Happy Tasty Tuesday!
A few weeks back we had a bit of a cold spell when it was damp and rainy so I was on the hunt for a warm home cooked meal that wouldn't take forever to make. Enter this easy to make, one pot recipe that packs a ton of flavor and makes plenty of leftovers.
Ingredients:
- 1 lb of hot sausage
- 3 tbsp olive oil
- 1/2 cup onion, diced
- 2 packages of frozen tortellini (I buy the multi colored ones but only because its extra colorful)
- 28 oz can of diced tomatoes
- 1 cup low sodium chicken broth
- 2 tbsp cream cheese
- 2 cups shredded cheddar cheese
- 1/4 tsp pepper
Directions:
- Boil water in a pasta pan and cook tortellini according to package directions. Set aside.
- In a large skillet, cook onions and sausage in olive oil until browned.
- Add chicken broth, tomatoes and pepper and bring to a boil.
- Turn heat down to low and add tortellini and let mixture simmer and thicken for about 15 minutes.
- Remove from heat and add cream cheese and shredded cheddar, mixing completely.
- Cover and let stand for another 5-10 minutes.
- Enjoy!
