Happy Tasty Tuesday!
So my good friend Meg was always "domestically challenged" meaning the only thing she could cook for herself was a microwave dinner and even then she ran the risk of burning it because she didn't follow directions (sorry Meg!). However, slowly but surely I have been encouraging her to cook more and experiment with different recipes. I even convinced her to invest in a crock pot so she can make nice dinners on Sundays. Recently Meg went out of her comfort zone and made lettuce wraps using a recipe she found online and was so proud of herself when they came out perfectly (she was sending me all these photos of her "masterpiece"). So I thought I would feature Meg's lettuce wrap recipe on the blog today, hopefully to encourage her to continue with cooking!
Ingredients:
- 1 tbsp olive oil
- 1 lb of ground chicken
- 1/2 medium onion diced
- 1/4 cup hoisin sauce (found in the asian section of the market)
- 2 tbsp soy sauce
- 1 tsp sriracha (or more if you like your food a little spicier)
- 1 8oz can of water chestnuts, drained and diced
- 2 green onions, sliced
- 2 cloves garlic, minced
- 1 head of lettuce *has to be a full head, not a bag*
- salt and pepper to taste
- **You can substitute or add any vegetable, next time Meg wants to add green peppers**
Directions:
- Heat olive oil in a saucepan over medium high heat.
- Add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks and drain excess water.
- Add garlic, onion, hoisin sauce, soy sauce, and sriracha until onions have been translucent.
- Stir in chestnuts and green until until tender, about 1-2 minutes. Season with salt & pepper to taste.
- To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf like a taco. (Be sure lettuce is washed beforehand).
