New Recipe: Taco Boats

Happy Tasty Tuesday!
It's no secret that I love Mexican food, so I'm always looking for new takes on the traditional dishes. This specific recipe only requires a skillet to prepare, so it makes it easy and simple. One pot dishes are my favorites because not only is it an easy meal to prepare, it's an even easier meal to clean up. These taco boats will take about 15-20 minutes to prepare, and about 20 minutes to cook.

Ingredients:
  • 1 lb lean ground beef
  • 1 cup of brown rice
  • 1 small onion, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 16oz can of diced tomatoes
  • 4oz can diced green chilis
  • 1/2 cup jalapeƱos (optional)
  • 1 cup salsa (I used medium, but you can used mild or hot too, its a personal preference)
  • 1 cup water
  • 1 cup low sodium beef stock
  • 2 tsp cumin
  • 1/2 tsp cayenne pepper
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 cup shredded pepper jack cheese
  • 1 pkg of Old El Paso taco boats (multiple options can be found in the Mexican food aisle) 
Directions:
  • In a skillet, cook ground beef, onion and peppers on medium high heat until ground beef is browned and cooked through.
  • Add canned tomatoes and chilies (don't drain), salsa, water, beef stock, rice and jalapeƱos to skillet and stir to combine.
  • Add spices and mix.
  • Cover and cook on low for 15-20 minutes, or until rice has softened and most of the liquid has cooked off
  • Spoon meat mixture into taco boats, top with shredded cheese.
  • Enjoy!
