This is probably my most favorite recipe I have made in a long time and it will definitely become a staple in my dinner rotation. It represents two things I love in a recipe: simple and flavorful. I made this meal a few Sundays ago and it took only 20 minutes to prepare. It's a really great option for those of you who aren't budding chefs but want to impress friends or family.
Ingredients:
- 1 pkg of boneless chicken strips
- 2 tbsp butter
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1 cup low sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup sun-dried tomatoes in olive oil, sliced
- 1/4 cup grated parmesan cheese
- 1/4 tsp fresh thyme
- 1/4 tsp dried oregano
- 1/4 tsp dried basil
- pepper to taste
Directions:
- Preheat oven to 400 degrees.
- Melt 2 tbsp butter in a large oven proof skillet on stove top over medium/high heat. Add chicken strips to skillet and season chicken with garlic, red pepper flakes and pepper. **Personally I used about half the garlic, flakes and pepper on one side and then flipped it and used the other half to season the other side. Chicken will be thin and you should cook each side for about 3 minutes.
- Stir in chicken broth, heavy cream, sun-dried tomatoes, parmesan cheese, thyme, oregano and basil for another 2 minutes.
- Place chicken mixture into the oven and cook for 25 minutes.
- Serve and enjoy. -- this chicken can be served with rice, vegetables or pasta!

I used a sun-dried tomato chicken recipe a few years ago and it turned out really good but this one looks sooo much better! I am definitely going to try this.
