New Recipe: Chicken with Peanut Thai Noodles

Happy Tasty Tuesday!
It's not very often that I think of peanut butter and consider it an item I would use as a dinner ingredient but it was the perfect flavor for this new recipe. My cooking specialties have always included Italian and Mexican food but lately I'm trying to incorporate more Asian inspired dishes into my repertoire. This dinner was very easy to make and packs a a great flavor punch.

Ingredients:
  • 1/2 cup creamy peanut butter
  • 1 cup reduced sodium chicken broth
  • 1/2 cup lemon juice
  • 1/2 cup reduced sodium soy sauce
  • 4 tsp Sriracha Asian hot chili sauce
  • 1/8 tsp crushed red pepper flakes
  • 12 ounces uncooked asian noodles
  • 1 large package of chicken breast strips
  • 2 cups carrots, diced
  • 1 medium red pepper, sliced
  • 2 mushrooms, diced
  • 2 cloves garlic
  • 1/2 cup finely chopped unsalted peanuts (optional)

Directions:
  1. In a small bowl, whisk peanut butter, chicken broth, lemon juice, soy sauce and Sriracha until fully blended.
  2. Cook noodles according to package directions, set aside.
  3. In a large skillet, cook chicken, carrots, peppers, mushrooms and garlic over medium heat for 5-6 minutes or until chicken is fully cooked.
  4. Stir peanut butter mixture into skillet and bring to a boil. Reduce heat and simmer for about 3-5 minutes or until sauce slightly thickens. Then pour noodles into skillet and stir to combine entire mixture.
  5. Garnish with peanuts and green onions.
  6. Enjoy!
