New Recipe: Chicken & Broccoli Cavatelli

Happy Tasty Tuesday!
This past weekend I was going through some of my recipe books looking for something new to try for dinner and discovered a large envelope. Inside the envelope was a binder full of my great aunt Sadie's recipes. They were handwritten and scanned on computer paper! Boy, could that woman cook, she had some amazing baking recipes that I'm eager to try along with plenty of traditional Italian dishes. Today I'm sharing her chicken and broccoli cavatelli recipe which is easy to make but packs a punch of flavor.

Ingredients:
  • 1 pkg of boneless chicken breasts (for this recipe I bought the thinner strips)
  • 1 lb cavatelli pasta
  • 1 1/2 cup chicken stock
  • 1 pkg of frozen broccoli (her recipe called for a fresh broccoli, chopped and steamed but I cheated on this part and just bought the frozen package to save time).
  • 1/3 cup white wine
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • black pepper to taste
  • "handful of grated parmesan cheese"
Directions:
  • Cook cavatelli in pot according to package directions (for about 8 minutes), set aside.
  • In a frying pan, saute chicken in chicken stock over medium high heat until completely cooked. **If you bought chicken breasts instead of the strips, you will want to cut them lengthwise in half to make them thinner before putting them in the pan**
  • While chicken is cooking, microwave broccoli. When chicken is cooked, add broccoli, butter, olive oil, and white wine. Let simmer, reducing to about half.
  • Add cooked cavatelli, pepper and garlic to chicken mixture, and mix well. Cook on low heat for 3-4 minutes until heated throughout.
  • Garnish with parmesan cheese.
  • Serve and enjoy!
