Now that summer has come to a close and I will no longer be consuming hot dogs and soft served on a weekly bases it's time for a detox, meaning less ice cream and more vegetables. I sometimes tend to let summer get the best of me food-wise and I end up eating way more than I should of food that isn't very good for you. Alas, now that I won't be attended anymore barbecues its time I get myself in gear with healthier options. This recipe I'm giving to you today is so simple and quite tasty (plus it makes excellent leftovers, which is the best part!). My uncle gave it to me a couple weeks ago and I was instantly hooked!
Ingredients:
- 1 rotisserie chicken, shredded
- 1 package of frozen veggie steamers (this one has peas, carrots, green beans and corn in it but I also love the broccoli, carrot, cauliflower one as well).
- 2 bags of microwave instant brown rice
- 1/2 can low sodium chicken broth
Directions:
- Microwave instant rice and pour into a serving dish, add chicken broth and mix well. Set aside.
- Microwave vegetables according to directions on bag.
- Shred chicken and dispose bones.
- Add chicken and vegetables to rice mixture and mix well.
- Season with salt and pepper to taste,
- Enjoy!
Is anyone else buckling down and eating healthier now that fall has arrived?
