Happy Tasty Tuesday! Now that Halloween is over we can start to focus on my favorite holiday Thanksgiving. Although we used to host Thanksgiving at my house, since we got Misa the duty has been passed on to my uncle because we wouldn't want my little monster helping herself to the Thanksgiving feast. So today I'm going to share a recipe that could be used as a side dish for Thanksgiving dinner, creamed spinach. Spinach is my second favorite vegetable next to broccoli and although I prefer it in the not so healthy dip form, I do think it adds some great flavor to any meal. This recipe is super easy and takes only about 15 minutes from start to finish!
Ingredients
- 2 tbsp butter
- 1 tbsp olive oil
- 1 small onion, minced
- 3 gloves of garlic, minced
- 1 bunches of spinach (I typically buy 2 bags of the pre-cut spinach, its much easier)
- pinch of salt and pepper for taste
- 1/4 teaspoon nutmeg
- 1/4 cup heavy cream
Directions:
- In a medium saute pan over medium-high heat, melt the butter and add olive oil
- While the butter is melting, chop onion
- Add the onions and garlic to butter mixture and cook for 3-4 minutes until soft (be careful not to burn the garlic)
- Add the chopping spinach (it will eventually wilt and mix well once it's over the heat)
- Once spinach is wilted, add the salt, pepper, nutmeg and heavy cream and mix everything together.
- Cook until liquid reduces by half (about 5 minutes)
- Enjoy!

Yes, this sounds SO good! I love spinach, so I think I'm going to have to try this out soon - or maybe I'll help my mom out and make it for Thanksgiving :)
