Happy Tasty Tuesday Guys!
As mentioned last week, I got a new crock pot which means new crock pot recipes are high on my priority list. Don't get me wrong, I really do love to cook and experiment with new recipes but after working all day sometimes it is hard to muster up the energy to cook dinner. The crock post really does eliminate that problem because before I go to work I can place all the ingredients in the crock pot and when I come home from work I have a meal hot and ready to serve. I've slowly been dabbling in more mexican recipes so I jumped on the opportunity to try these crock pot beef fajitas.
Ingredients:
- One 1 1/2 lb flank steak (trimmed of excess fat)
- 3/4 cup chunky salsa
- 1 tbsp tomato paste
- 1 tbsp olive oil
- 2 cloves garlic
- 3 tbsp lime juice
- 1 tsp black pepper
- 1/2 tsp salt
- 1 large white onion, sliced
- 3 red bell peppers sliced into stripes
- 1 pkg of wheat tortilla wraps
- Guacamole for garnish
- 1 small block of pepper jack cheese, shredded for garnish
Directions:
- In a bowl, combine salsa, tomato paste, olive oil, garlic, lime juice, ground pepper and salt and mix well.
- Lay steak in crock pot and pour this salsa mixture over the meat, coating it. Lay onions and peppers on top.
- Cover and cook on low for 6-8 hours.
- Remove the steak and shred it (the meat should be so tender that is just falls apart when you pull at it).
- Microwave wheat wraps for 30 seconds to warm them, then add shredded steak, some of the salsa sauce and veggies.
- Top steak fajitas with guacamole and cheese.
- Enjoy!

We are big crock pot fans around here too! Most often we end up making a Mexican type dish as well :)
