Happy Tasty Tuesday!
It's officially grilling season my friends and I couldn't be happier because in my opinion grilling is so much easier than cooking. All you really have to do is marinade some type of meat and slap it on the grill with some seasoning. Once summer arrives it definitely cuts my cooking time in half and I am not complaining about that. I originally had this asparagus pesto dish planned to share with you this week, but I had some technical difficulties (not every recipe goes according to plan!) so instead I will share with you a simple grilled shrimp recipe!
Ingredients: (Don't you just love recipes with only 2 ingredients?!)
- 1 package of jumbo frozen shrimp
- Cajun seasoning
- Skewers (I like these wooden ones or these stainless steel ones)
Directions:
- About 30 minutes before cooking time take shrimp out of freezer and put them in a bowl of water to defrost them.
- Once shrimp are no longer frozen, take shell off shrimp.
- Apply cajun seasoning to shrimp (it's all about how spicy you like it--- I use a lot because I like shrimp with a bite to them!)
- Place seasoned shrimp on skewers
- Grill on medium heat for 2-3 minutes on each side until done (don't overcook--each grill is different so pay attention and don't be afraid to do a test-taste).
- Enjoy!
** I served the shrimp with a vegetable/pasta steamer similar to this and corn on the cob**
