Happy Tasty Tuesday!
I was in the mood for something spicy last week so I was looking at different recipes that have a little bite to them and I came across this amazing chipotle chicken recipe. The recipe is very easy to make and can be served a bunch of different ways. When I made it I served in on wheat wraps, but it also would be great in a salad or spread on tortilla chips for nachos!
Ingredients:
- 5 chipotle peppers in adobo sauce & 3 tsp of the sauce (similar to this). *For less spicy use 2-3 peppers*
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 cup orange juice
- 1 1/2 cups reduced sodium chicken broth
- 1/2 cup light beer (if you don't have beer you can substitute with an additional 1/2 cup broth)
- 1/2 cup fresh cilantro chopped
- 1 lb chicken strips
- 3 tsp mustard
Directions:
- Heat oil in pan over medium heat, mince garlic and chipotle peppers and place in the pan. Sauté peppers and garlic for 2-3 minutes, stirring to prevent them from sticking to pan and burning.
- Add orange juice, chicken broth, beer and cilantro and bring liquid to a boil (increase heat of stove to high).
- Add the raw chicken strips and reduce heat to medium. Cover pot and cook for 15-20 minutes or until chicken is cooked throughout. Remove chicken from mixture and shred with a fork.
- Keep the sauce on the stove under low heat, mix in mustard and cook the sauce until it reduced by about half and thickens (about 5-7 minute).
- Add the shredded chicken back into the pot and toss in the sauce.
- Serve and Enjoy!
